I would like to choose the best place where I will be able to customize a server for my specific needs.
Do you think that Serverpoint.com can be a good option for this?

ServerPoint have been around for a good few years so you can trust them.
Have you taken a look at SingleHop? From what I have heard they are really good and cheap!
