At the moment,
I'm running an arcade video site because it's somewhat automated! I can set it up and leave it.. What I'm wondering, what other sites are good like this and can be setup and left to run on their own with minor updates?

I don't think that a site that you create and then leave it can be a success.
I mean even that the site is an automated script, you have to customize it continously to see what users want, plus you have to promote it every day.

Definately,
To rephrase, I mean sites such as: free sms, proxy etc.. Ones which require some updating but dedicating hours on end isn't necessary.

A proxy is a good idea.
I've created a proxy before some time and I am very sattisfied. It is a site that can have some income if you promote it right. But you definately need a dedicated server to run such a site, as they require lots of bandwidth.

20-30 Gb per month.
But you can start with about 4-5 Gb.
Also have in mind that most of the shared hosting providers, wont accept a proxy site, but there are also shared hosting providers just for proxy sites
