http://www.medievalcastlesuites.com/ - Looks pretty but, you haven't got any alt attributes on the images, you have used the H3 tag on the front page but not H1/2 these should be used hierarchical way, so really you should have a H1 and h2 tags on the page as well. The front page also needs more content but I'm guessing that's coming right and don't forget the title tag. The inner pages again you are not using heading tags, still no alt attributes though you are using headings (bonus points)
So Think about structure of the page, create sections within the page and use heading tags, for images such as logo's photos include both an alt (legally required in greece ) and a title attribute. For other images you just need an alt tag, make sure each page has a title and that your meta tag description is unique for each page.
The map - is really good and I like it alot though once again you have used the wrong headings.

The front page is not going to have much more content since it serves the purpose of an intro and don't want to overwhelm the visitor with to much content, you would want more content ideally for the Search Engines right ?
As for the headings, is it more a matter of SEO ? to have H1 and H2 tags ?

Alt attributes are legal requirement under EU legislation for disability and accessibility of which Greece is a signature Greek disability laws also require all possible steps to make a site accessible. In practice the common consensus is that a site is considered to take all "possible" steps if it meets WAI (w3c accessibility initiative) Level 1 & 2
Headings are a mixture, partly because the XHTML standard states that heading tags are hierachical strucutre to maintain semantic meaning, so while sites do "validate" with mixed headings they are not actually valid XHTML. It is also very good for search engines and humans, as they can determine quickly and easily important information and various sections within a site.
I think your front page, does need more content both in terms of SEO but also you do not have enough content to draw people in, the site lacks a focus at the moment so at least providing information instantly will help draw those users in.

@Tim About the ALTs. How do you suppose this will be enforced ? I suppose government sites will have to start doing that first
I will see what I can do with the headings.
About the front page I am a strong believer of simple is beautiful and less is more, and like I said it acts both as an intro and index for the visitor

Well here in the UK they are slowly starting to enforce disability rules, the law came into full effect in 2005 since then 2 big companies were slapped on the wrist (small fines) but very little enforcement instead the RNIB (royal national institute for the blind) has been pursuing companies via the Civil court but like all things it will take time, in Belgium for instance its actually a criminal offence to not develop an accessible site though it hasn't been enforced the government there has declared it will start. Interestingly its the ISP who probably will get into trouble as they are hosting the site, but either way its worth doing simply because it makes your site accessible and also good for SEO. Plus if you get in the habit it works well.

I agree with Tim. Your site looks great, but in terms of SEO you need to add/change some things.
You should use the H1, H2, H3 structure, add a <title> tag in your home page and use alt in images. Alt wont be a really legal problem in Greece - at least not in the near future - but alt helps your site have valid code, and give an extra tip for SEO.
Now you also need something regarding marketing. What is the purpose of this site? I guess is to get more guests in your hotel, right? There is nothing for someone who is interested to do in your site. Maybe you should add a booking service or at least a "show interest form" there so people can stay in touch with you and convert them to sales.

I am working on both of your and Tim's suggestions,
As for marketing, I am doing my best - its a real business and it does need visitors.
I will be paid for this but I am still in the process of fixing some last stuff - putting pictures and I will make a reservation form.
For marketing I have some experience with my family's apartments/hotel http://hausfay.com I build it over time (with link building) and now it gets on the first or second page for stuff like "chios" "chios greece" "chios map" "chios apartments" "chios studios" etc (not VERY competitive terms but good for what I want)
If anybody has any tips on how to speedy things for this Hotel (or make Haus Fay better) I will gladly listen.
